Peanut Butter Granola

This recipe makes 2 servings (2 cups).

Ingredients

  • 500 ml (2 cups) quick-cooking oatmeal
  • 2.5 ml (½ tsp) ground cinnamon
  • 1 ml (¼ tsp) salt
  • 90 ml (6 tbsp) natural peanut butter
  • 60 ml (¼ cup) honey or maple syrup
  • 2.5 ml (½ tsp) vanilla extract

Preparation

  1. Preheat oven to 325 ° F (160 ° C). Grease or line a large baking sheet with parchment paper.
  2. Mix together oatmeal, salt and cinnamon.
  3. In the microwave or on the stove, melt the peanut butter and honey (or maple syrup) until smooth.
  4. Remove from heat and stir in vanilla.
  5. Add the dry ingredients and mix well.
  6. Spread the mixture on the cookie sheet.
  7. Bake for 15 to 20 minutes until lightly browned, stirring gently halfway through baking. Remove from oven and let cool completely.

**Store this granola in an airtight container or glass jar with a lid for up to 2 weeks at room temperature or 2 months in the freezer.
