Slow Cooker Chicken Tortilla Soup

There’s nothing better than coming home after a cold day and smelling dinner on the stove. However, that can be far from the truth if you’re the one making dinner. 

Created by registered dietitian Cailtin Boudreau, this slow cooker Mexican chicken soup will have your home smelling great all day long. Wake up a little earlier than usual, toss all the ingredients in the slow cooker, and turn it on. No pre-cooking is required. Plus, you’ll only have a few ingredients to chop since most of them are canned. This makes for a quicker prep time. 

Yield: 6 servings

Ingredients :

  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 chicken breasts
  • ½ tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1 can (15 oz) fire-roasted tomatoes with their juices
  • 1 can (10 oz) diced tomatoes with juice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 6 cups chicken broth
  • Salt and pepper, to taste

Optional toppings:

  • Tortilla chips
  • Sour cream
  • Coriander
  • Diced avocado
  • Lime juice

 

Preparation:

Add all ingredients (except toppings) to the slow cooker. Mix well. Place the lid on the slow cooker and cook on high for 4 hours or on low for 8 hours.

After 4 (or 8) hours, remove the chicken and place in a large bowl. Shred with a fork and return to the slow cooker. Stir the soup well. Taste and add salt and pepper, if needed.

Ladle the soup into bowls and add your favorite toppings: tortilla chips, a dollop of sour cream, cilantro, diced avocado and a squeeze of lime juice.

Canned Tomato Products: Canned tomato products, like the ones in this soup, are even higher in the antioxidant lycopene than fresh tomatoes. Lycopene has been shown to benefit heart and bone health, as well as some types of cancer.
