  • kg eggplant, peeled and fried
  • 1 kilo medium tomatoes

How to prepare

  • Fry the onion in a little oil until it wilts.
  • Peel the tomatoes and cut them in circular motions, fry over the onions, then add the green pepper slices.
  • Add a little water with tomato molasses.
  • Add chickpeas with tomatoes and let it flip.
  • Add salt and black pepper and stir.
  • Drain the fried eggplant over the tomatoes and let it boil over a low heat.
  • Stir the moussaka in a pyrex dish and serve alongside vegetables and Arabic bread.

One of the famous dishes in Turkish cuisine, lentils are an important source of protein and replace the absence of meat and enhance the body with energy, activity and vitality.

  • Half a kilo of lentils as a meal
  • 1 teaspoon garlic
  •  green coriander bundle
  •  teaspoon spices
  •  teaspoon salt and pepper (to taste)
  •  Half a cup of soft rusk
  •  tablespoon vegetable ghee
  •  Two diced boiled potatoes
  • Onion cut into cubes

 

How to prepare

  • Wash the lentils well, then soak them in water overnight, then drain them from the water well in a deep bowl.
  •  Mix lentils, potatoes, onions, garlic and green coriander.
  • Frmi the previous mixture in the kibbeh very finely.
  • Season the mixture with spices, then gradually add the rusk, kneading until you get a homogeneous texture.
  •  Add vegetable ghee or two cups of oil, but gradually and knead well, then arrange in a tray.
  •  Put the kofta in the oven or fry it on a low heat.
  • Arrange the fingers in a tray, then light a charcoal and place it in the center of the tray with the cover.
  •  Leave 10 minutes and serve immediately.

It is one of the most well-known dishes in our Arab world that has a high nutritional value and can be prepared with vegetables, mushrooms, cheese and meat, but today we like to serve it with vegetable ingredients.

  • Potatoes, peeled and cut into cubes
  • teaspoon salt
  • Finely chopped onion
  •   Fresh mushrooms minced
  • Three tablespoons of butter
  • Half a cup of sour cream
  • Quarter of a teaspoon of pepper
  • ¼ cup grated parmesan cheese
  • Three carrots, cut into small pieces
  • Half a cup of corn
  • Half a cup of green peas

 

How to prepare

  • Put the potatoes in a large pot on the stove and cover them with water
  • Add half a teaspoon of salt and bring to a boil.
  • When boiling, cover the pot and cook the potatoes for about a quarter of an hour, until soft.
  • Drain the potatoes and mash them in a medium bowl.
  • Melt two tablespoons of butter in a saucepan over the heat, then add the onions and mushrooms.
  • Stir the ingredients until they wilt, then add the corn, carrots and peas.
  • When the ingredients are soft, add the potatoes, sour cream, the remaining salt and pepper.
  • Stir the ingredients together well.
  • Put the mixture in an oven tray, sprinkle cheese on it and add the remaining tablespoon of butter on top.
  • Bake the tray in the oven for about 25 minutes on high heat.
