Laurel, whose Latin name is Laurus nobilis, is from the I. Defnegiller (Lauraceae) family. It is also known as “tenel”, “har”, “tefrün”. The part used is leaves. Its freshness, dryness and oil are evaluated.
It is used in seafood, sauces, potato and tomato dishes, soups, some meat dishes, boiled, pickles, stews, fries and rice. It is put into some liquors to add flavor. It is an antiseptic, stomach relaxing, expectorant, antipyretic. It is effective against flu, angina, chronic bronchitis, shortness of breath, rheumatism and digestive difficulties.
