Ingredients
For the dough:
Flour: 7 cups
Yeast: a tablespoon
Sugar: a tablespoon
Warm water: 2 cups
Olive oil: a quarter cup
For the filling:
Onions: 5 grains (cut into small cubes)
Green thyme: half a kilo (washed and drained)
Sumac: a cup
Lemon juice: 2 tsp
Salt: a teaspoon
Olive oil: 2 cups
How to prepare
To prepare the dough: Put the flour, sugar, yeast and olive oil in the electric mixer and start adding warm water to the ingredients until you have a homogeneous dough, then remove the dough from the dough bowl and knead it a little with your hands and then set it aside for 60 minutes until it ferments.
To prepare the filling: Put the olive oil and chopped onions in a saucepan on the fire and stir until the onions are wilted, then add a cup of sumac, pour the lemon juice and salt, then put the green thyme and stir the ingredients until well distributed.
Divide the dough into equal balls and spread it on a surface sprinkled with a little oil. Fill the dough with the filling mixture and close the dough on the filling and place it with an oiled oven tray and spread the dough using your hands until it becomes thin.
Put the green thyme pastry in the oven at 180 degrees for 20 minutes.
