Fruit and Almond Tart
Fruits are really healthy, and so are almonds, and somebody has kindly created the most delicious recipe with both. It takes 25 minutes to prepare, and an hour to chill.
1 ½ cups of Multi-Grain crackers, crushed
¼ cup granulated sugar
1 teaspoon of cinnamon
¼ cups of butter, melted
12 ounces reduced-fat cream cheese, softened
1/3 cups of firmly packed brown sugar-flour
¼ cups milk
¼ teaspoon almond extract
½ cup finely chopped almonds (toasted)
3 cups of strawberries, seedless grapes, raspberries, blueberries, bananas, oranges etc.
¼ cup red currant jelly, melted
In a bowl, mix the multi-grain crackers, granulated sugar and cinnamon. Next you have to add the butter and mix until combine. Add the dough to a 9 ½ – 10 inch tart pan with a removable button and bake for 8-10 minutes at 350-400 degrees Fahrenheit. Cool completely. Separately, beat cream cheese with brown sugar, milk and almond extract until fluffy.
Add the almonds. This mixture will be put on top of the cooled dough. The last step is to top with fruit and drizzle jelly. Put in the freezer for one hour, and serve.
