Eggplant rolls with cheese



Ingredients for tomato sauce:

Tomatoes: one and a half cups (mashed)

Onions: 1 piece (chopped)

Garlic: 1 tablespoon (mashed)

Olive oil: 2 tbsp

Salt, to taste

Black pepper to taste

Eggplant: 3 pieces (large)

Ricotta cheese: 1 cup

Mozzarella cheese: half a cup

Parmesan cheese: 12 cup

Basil leaves: 1 tablespoon (chopped)

Tomato sauce: one and a half cups

Oil: as needed

How to prepare

We prepare the sauce by heating the oil in a frying pan and frying the onions and garlic with salt and black pepper until they soften, then add the tomatoes and leave the sauce on a low heat for 10 minutes.

We peel the eggplant, divide it into thin slices, then sprinkle it with salt, leave it for 30 minutes and dry it, then start frying the slices in hot oil until browned, mix the types of cheese with basil, then pour an amount of tomato sauce in the oven tray.

We stuff the eggplant slices with about a tablespoon of the cheese mixture, roll them and arrange the eggplant rolls in the oven tray, then pour the rest of the sauce over it and sprinkle a little cheese on the face, then we put the tray in the oven at a medium temperature for 20 minutes.
