Flour: 1 cup (white)
Flour: 1 cup (brown)
Baking powder: 2 tsp
Eggs: 2 tablets
Vanilla: a tablespoon
Powdered sugar: half a cup
Dates: 1 cup (chopped small cubes)
Canola oil: 12 cup
Apple: 1 piece (large / peeled and chopped small cubes)
Cinnamon: 1 teaspoon
Hot water: 1 cup
How to prepare
Mix the white flour, brown flour, baking powder, and cinnamon in a bowl.
Whisk the eggs, vanilla and fine sugar with an electric whisk for 5 minutes, until the mixture is crisp and creamy.
Put the chopped dates in hot water for 5 minutes, then mash them with a food processor.
Add the oil and the date puree to the egg and sugar mixture and mix well until the ingredients are homogeneous.
Add the flour mixture and stir until the ingredients are mixed, then add the apples and stir.
Grease a cake pan with a little butter and a pinch of flour and pour the cake mixture into the pan.
Put the pan into the oven at 180 degrees for 40 – 45 minutes, until the cake is soft.
Remove the cake from the oven and leave it to cool for ten minutes, then transfer it to a serving plate and serve warm or cold as desired.
