Chia Seed, Coconut and Cacao Pudding

This delicious low-sugar pudding is a heart-healthy breakfast, snack, or dessert. Chia seeds are packed with soluble fiber that lowers bad cholesterol levels, and omega-3, an important fatty acid that our bodies can’t produce on their own.

 

Ingredients

  • ¼ cup sweetened or unsweetened cocoa powder
  • 3 tbsp maple syrup or honey
  • ½ tsp ground cinnamon
  • 1 pinch of sea salt
  • 1 tsp vanilla extract
  • 1 ½ cups coconut milk
  • ½ cup chia seeds
  • ¼ cup coconut flakes

 

Preparation

  1. Place cocoa powder, maple syrup, ground cinnamon, salt and vanilla in a bowl and whisk to combine.
  2. Add the coconut milk and whisk until smooth.
  3. Add the chia seeds and coconut flakes and whisk again to combine.
  4. Cover and refrigerate overnight, or at least 3 to 5 hours, until mixture is the consistency of pudding.
  5. Serve cold with toppings of your choice, such as fruit, granola, nut butter, or coconut whipped cream. The pudding will keep for 4 to 5 days covered in the refrigerator, but it tastes best when chilled.
