This delicious low-sugar pudding is a heart-healthy breakfast, snack, or dessert. Chia seeds are packed with soluble fiber that lowers bad cholesterol levels, and omega-3, an important fatty acid that our bodies can’t produce on their own.
Ingredients
- ¼ cup sweetened or unsweetened cocoa powder
- 3 tbsp maple syrup or honey
- ½ tsp ground cinnamon
- 1 pinch of sea salt
- 1 tsp vanilla extract
- 1 ½ cups coconut milk
- ½ cup chia seeds
- ¼ cup coconut flakes
Preparation
- Place cocoa powder, maple syrup, ground cinnamon, salt and vanilla in a bowl and whisk to combine.
- Add the coconut milk and whisk until smooth.
- Add the chia seeds and coconut flakes and whisk again to combine.
- Cover and refrigerate overnight, or at least 3 to 5 hours, until mixture is the consistency of pudding.
- Serve cold with toppings of your choice, such as fruit, granola, nut butter, or coconut whipped cream. The pudding will keep for 4 to 5 days covered in the refrigerator, but it tastes best when chilled.
