Today, we are heading south-west with our delicious Basque cake recipe!
This regional specialty very popular in this region of France (but not only!) is made of a creamy vanilla pastry cream contained in a crispy shortcrust pastry.
For an aesthetic cake, you can decorate the shortcrust pastry with the tip of your knife.

Preparation of pastry cream
1) Ingredients
500g whole milk
2 vanilla pods
4 egg yolks
110g sugar
50g cornstarch
2) Preparation
In a saucepan, heat the milk with the vanilla beans.
Whisk the egg yolks and sugar in a mixing bowl, add the cornstarch.
When the milk is hot remove the vanilla pods and add the milk to the mixture. Put everything on the fire and whisk until thickened.
Set aside in the fridge with plastic wrap to prevent a crust from forming.
Preparation of shortcrust pastry
1) Ingredients
150 g softened butter
140g sugar
1 pinch of salt
220g flour
60g egg yolks
Gilding: one egg yolk
2) Preparation
In a stand mixer, combine the softened butter, sugar and pinch of salt.
Then add the flour and stop mixing as soon as the mixture is homogeneous. Add the yolks then set aside.
Divide the dough in two, since you will have to make 2 disks of dough. Roll out each piece of dough then refrigerate.
Darken the circle and the edges (here 3 cm).
Add the pastry cream then cover everything with the second disc of dough.
Brush with an egg yolk using a brush then draw vertical and horizontal lines.
Bake for 40 to 45 minutes at 160°C.
