FABRICATION

For the dough, put all the ingredients except flour in a large bowl. Let the yeast and butter melt by mixing. Add flour little by little and knead for 4-5 minutes. Shape by flattening with your hand. Wrap the dough in cling film and refrigerate overnight. The next day, roll out the dough on a floured counter. Open it as thick as a finger, put whole and cold butter in the middle. Cover the dough with butter and roll out the dough in finger thickness. Fold the opened dough and let it rest in the refrigerator for 2 hours. Repeat this process 4 more times. Open it in half a finger thickness at the last opening. Cut the dough into 8 triangles. Starting from the thick side of the triangle, roll it up and give it a croissant shape. Place on a baking tray lined with greaseproof paper. Let it rest for 2 more hours in the refrigerator with the tray. Spread the whipped milk with the egg on it. When the oven is cold, put boiling water in a separate bowl and leave the tray in the oven for 1.5 hours. Then take the croissants out of the oven and spread the egg milk on them again. Bake in a preheated 180 degree oven for 30-35 minutes.
