FABRICATION
Scratch the chestnuts with a knife and boil them in plenty of water. Peel and set aside. Whisk the butter and granulated sugar in a bowl with a mixer. Add the eggs and continue whisking. After adding the sifted flour and granulated coffee, mix. Melt the chocolate in a double boiler and add it to the flour mixture. Add the chestnuts that you chopped into large pieces and mix all the ingredients. Pour the mixture into a 30×15 cm baking tray lined with oiled paper and smooth it with a spatula. Bake in a preheated 170 degree oven for 20 minutes. Cool on wire and invert and remove to serving dish. Apply hazelnut cream on it with a spatula. For the chocolate sauce, melt the chocolate and butter in a double boiler. Add cream and whisk and spread over hazelnut cream after warming. Let it stand for at least 3 hours, then decorate it with pomegranate seeds and serve.
