Lentils have great benefits for health, it limits the incidence of diseases, and its richness in dietary fiber, which reduces harmful cholesterol levels in the blood, protects against cardiovascular diseases, not to mention being considered a safe alternative to meat. Given the importance of lentils for our health, chef Ali Fouad, from Jumeirah Palace Hotel, offers a recipe for lentil soup with acid rich in iron and starches that nourish the body and give it the energy it needs.
Ingredients:
• 200 grams of lentils.
• 150 grams of red onion.
• 200 ml of olive oil.
• 750 ml of water.
• 500 g of potatoes.
• 100 g of salt.
• 30 grams of ground cumin.
• 20 grams of black pepper.
• 500 g of chard leaves.
• 20 grams of garlic.
• 30 grams of green coriander.
• 10 grams of mint leaves.
• Two fruits of fresh lemon.
Recipe
1-put the oil in a saucepan over a high heat, heat it, then add the chopped onion and stir until brown.
2-add the potato cubes and the washed lentils to the saucepan, stir the mixture.
3-add the garlic, coriander and mint.
4-Add salt, cumin and black pepper.
5-pour about 750 ml of water over the lentil mixture, and leave to boil for about 10 minutes.
6-add the chard leaves, reduce the cooking heat to medium, and leave the mixture on the fire until cooked.
7-add a little lemon juice to the mixture just before serving.
8-the recipe is served as a soup, or as a hot appetizer.
