Materials:

 

250 grams of pasta (type of your choice)

 

1 large onion (chopped)

 

2 cloves of garlic (chopped)

 

1 red pepper (chopped)

 

1 green pepper (chopped)

 

1 carrot (grated)

 

1 cup peas (frozen or fresh)

 

4 tablespoons of olive oil

 

Salt

 

Black pepper

 

Chili pepper (optional)

 

Parmesan cheese (grated, for serving)

 

Fresh parsley (for garnish)

 

How to make:

 

1. Boil water in a pot and boil the pasta according to the instructions on the package. After boiling, drain and set aside.

 

2. Heat olive oil in another pan. Add chopped onion and garlic. Fry until onion becomes transparent.

 

3. Add the chopped peppers, grated carrots and peas. Stir-fry until the vegetables soften and lightly caramelize.

 

4. Cook over medium heat, stirring occasionally, until the vegetables are cooked. Be careful not to overcook the vegetables, they should still be crispy.

 

5. Add the boiled pasta to the vegetables and mix well.

 

6. Add salt, pepper and optionally red pepper flakes. Mix the mixture well to ensure that all ingredients are incorporated.

 

7. When serving, you can add grated parmesan cheese and freshly chopped parsley on top.
